Rice + Kale + Roast Chickpea Salad
Boom! I love these crazy simple recipes; the sky's the limit as far as what you can put in them. I made this for lunch at work and really just tossed in what I had laying around. SO GOOD! This one's worth trying and customizing for yourself!
Salad
1 Jalapeño, seeded and sliced
1 Small broccoli head, cut into small florets
1 Red pepper, seeded and diced
6 Green onions thinly sliced
1 Large handful kale, finely chopped
1 Cup basmati rice, cooked
4 Tbs cilantro finely chopped
1 Can chickpeas (roasted mine first)
1 Handful dried cranberries
Dressing
1/4 Cup EVOO
1/4 Cup fresh lime juice
1 Tbs honey
Salt + pepper to taste
Directions
Nothing fancy here - just toss it all in a bowl and mix :)
